Pie dough without egg

- 450g flour
- 250g butter
- 80g caster sugar
- 14 cl of cold water
- 1 pinch of salt

- 1. Sift the flour, sugar, and pinch of salt into a large bowl. Add the cold diced butter. Knead with your fingertips until you get a sandy texture.
- 2. Add the water and continue to knead the dough with your fingertips until you obtain a homogeneous ball. Wrap the dough in cling film and place it in the refrigerator for 1 hour.
- 3. Roll out the dough on your lightly floured work surface. Place the dough in a pie pan and garnish it as desired.
It is possible to make this pie dough in a gluten-free version. For this, replace the wheat flour with a mixture of 290 g of rice flour, 120 g of cassava flour, and 40 g of cornstarch. This pie dough will suit all gourmets!
