Coconut flan with sweetened condensed milk

- 400g sweetened condensed milk
- 200ml coconut milk
- 4 eggs
- 80 g grated coconut
- 100g caster sugar

- 1.Preheat your oven to 180°C (th.6) by installing a gratin dish filled with water one-third full in order to prepare a bain-marie. Put a cake mold (preferably silicone) on your work surface, then start by preparing your caramel in a frying pan, melting then barely browning over low/medium heat the sugar well spread over the whole surface of the pan. As soon as it becomes liquid (and without letting it burn), pour it into the bottom of the mold.
- 2.Next, prepare the flan mixture in a bowl: mix (with a whisk or a spoon) the eggs, the grated coconut, then the sweetened condensed milk and the coconut milk. Pour your preparation over the caramel in the mold, then place it in the bain-marie, and bake it for more or less 45 min, until the tip of a knife comes out dry.
- 3.Leave the flan to cool then serve it lukewarm with a spoon, or unmolded (after having spent a few hours in the refrigerator).
If you want to flavor your flan, add 1 tbsp. tablespoon rum, vanilla extract, or orange blossom water. To take care of the presentation, do not hesitate to distribute your caramel and your flan preparation in individual ramekins (cooking will then take less time).
