Appetizer sauce with goat cheese
INGREDIENTS :
8 PEOPLE
- 200g semi-thick fresh cream
- 1 shallot
- 1 log of goat cheese
- 1/2 bunch of fresh chives
- salt pepper
PREPARATION :

- 1. Clean and pat the chives dry. Finely chop it.
- 2. Peel and chop the shallot very finely.
- 3. Remove the crust from the goat cheese log and mash it with a fork in a bowl.
- 4. Add the semi-thick fresh cream, the chopped shallot and the chopped chives. Mix well until you get a smooth and homogeneous sauce. Salt and pepper to taste, then stir.
- 5. Cover the bowl with cling film and place this goat cheese sauce in the refrigerator until tasting.
- 6. Serve this very cold goat cheese sauce as an aperitif, to accompany sticks of raw vegetables, or during the main course, to coat pieces of poultry simply cooked in the pan. You can also use it to make various and varied savory verrines or make homemade burgers, bagels, wraps and other sandwiches.
